Today I made a beet cake, from a Joy the Baker recipe. Not only does the chocolate cake have beets in it (which makes it super moist), but beets in the frosting give it a bright pink color. Both of my flat mates, who don't like beets, gave their stamp of approval! Since it is pink, it definitely gets my stamp of approval!
